Certificate III in Commercial Cookery

Begin a career in commercial cookery. You will gain fundamental skills and knowledge in a wide range of well-developed cookery skills and kitchen operations where you will learn how to prepare food and menu items. This course will provide you with hands-on experience and prepare you to be job-ready. This course requires students to undertake workplace integrated learning where they will have to demonstrate the ability to safely and hygienically prepare, cook and present menu items for a minimum of 48 complete food service period that cover breakfast, dinner, lunch and special function in a commercial kitchen in an actual workplace environment.

COURSE DURATION
1 academic year (4 terms of 9 weeks each which includes 1 term of work placement)


TARGET AUDIENCE
This qualification is for individuals who wish gain hands-on experience in the commercial cookery environment to pursue a career as a commercial cook in restaurants, hotels, clubs, pubs and coffee shops.


DELIVERY MODES
Full-time, on-campus for theory subjects and practical component of the course will held at the Commercial kitchen at Ultimo for practical sessions. The commercial kitchen is approximately a 10-minute walk from the SBTA campus.
